Black Bean, vegetables and brown rice salad with spicy Lemon Vinaigrette

This salad is a great complement to chicken the grill, a sacósándwich barbecue pork, or just add some grilled shrimp to be a meal himself. Black Bean, vegetables and brown rice salad with spicy Lemon Vinaigrette Salad:
  • 1 14.5 oz can of black beans, drained and rinsed
  • 1 small onion
  • 1 bell pepper, any color
  • 3 stalks celery
  • 3 carrots or 1.5 cups grated carrot
  • 1 cup corn
  • 1 cup cooked brown rice *
  • 4 strips of crispy bacon

  • Cotija cheese 4 ounces **
  • handful of chopped cilantro

Seasoning:
  • 2 limes, juiced (should be about 4 tablespoons )
  • apple cider vinegar 1/4 cup
  • Dash each of cumin, pepper, chili powder, salt, pepper, sugar
  • 1/2 cup olive oil

Given all the vegetables and bacon to your preferred size, and throw them into a large bowl with the beans and rice.

For the dressing, whisk together lemon juice, vinegar and seasonings in unaun small bowl and drizzle in the olive oil while whisking. Adjust amount of oil until desired consistency.

Now, just spray the dressing on the plate of vegetables and beans stir negrosy. Adjust salt if necessary. Cover with shredded cheese and Cotijacilantro, and you're done! You can eat now, but the salad serámejor if left to stand for an hour or two.
