Protein-Packed Sundried Tomato, Feta and White Bean Dip
Pic-proteína Sundried tomato, black Bean Dip feta cheese and
yield: about 2 cups
1/2 cup sun-dried tomatoes (not packed in oil), chopped
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup feta cheese shredded
3 tablespoons lemon juice
2 cloves garlic, coarsely chopped
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried oregano
Directions:
to soften sundried tomatoes: Bring a cup of water to boil in a saucepan. Add the tomatoes, cover and remove from heat. Let stand 10minuto.
Drain the tomatoes in a strainer over a bowl and reserve the liquid. Chop tomatoes coarsely.
Place sun-dried tomatoes, beans, garlic, lemon juice, olive oil, saly pepper in the bowl of a food processor. Process until smooth, adding the reserved tomato liquid in small amounts until the consistency deseadaes obtained. Add the feta cheese and oregano and pulse until combined.
Transfer the dip into a bowl and enjoy vegetables or toasted whole wheat pita.
This sauce can be covered tightly and refrigerated for up to three days.
