Today is International Pancake Day and want to share my recipe favorite gluten-free and vegetarian crepes. I love this recipe because it requires only 5 ingredients relatively cheap, easy to find (perhaps already in your kitchen). Only one type of flour is needed, gums or starches no or any other special additions. It is free of refined sugars, is free from grain, and has a large amount of protein through chickpea flour. They are also quite foolproof, and this comes from a footman I admitted pancake.
I have talked in the past how my skills for making pancakes (or lack thereof) have been a source of great shame and stress. Ok, not really, but I've thrown a lot of failures, flapjack, unpleasant soft in my day. To be completely honest, I've never been much of a pancake person (I much prefer waffles), however this version of chickpea is helping to level the playing field. When I started this blog, I had this great idea for a recipe for apple pancakes and caramel spent weeks trying to get them to come to the right. They were horrible! Gummy inside, burnt on the outside, with a ridiculously long list of ingredients. Fluffy pancakes vegetarian gluten + seemed impossible! I like to think I've learned a few things over the last year or so. Not least of all I realized that simple, the more the better, when it comes to recipes (and life, probably).
These silver dollar pancakes chickpea juuuusssst out right. Fluffy and light inside with an outer gold. Perfectly tender and bouncy. I've never been able to make a pancake player (or tasting) with any other batsman, even traditional gluten-and eggy batter. As long as you keep a little chickpea flour in hand (which is a great and versatile, and cheap gluten flour), as well as some of the basic ingredients like banana, almond milk and baking powder ... these picturesque silver dollar pancakes herbal can be yours.
I hope they give these little pancakes try. Even if you have had some trouble hot hotcakes in the past, this recipe must restore confidence in maneuvering a little dough on a hot griddle.

The dollar silver sweet chickpea flour pancakes (free of: gluten, grains, sugar, eggs, dairy products)
- chickpea flour 1 cup
- 1 1/2 teaspoon baking powder
- 1 cup almond milk (or other dairy free vegetable milk)
- 1/4 cup mashed very ripe bananas (about 1/2 large banana)
- 1 tablespoon maple syrup or two medjool dates (preferred or other sweetening matter: pinch of stevia, sugar 2-3 teaspoons of coconut, etc.)
- optional: pinch of salt, 1/2 teaspoon cinnamon, 1 teaspoon vanilla
Instructions:
- whisk the flour and baking powder in a large bowl.
- Blend almond milk, banana, maple syrup and optional ingredients in blender until smooth. Pour wet dry, and beat until smooth. If the batter seems too thin, add another tablespoon or two of flour. Let stand a few minutes while the pan is heated.
- Heat a skillet over medium heat. Add a little coconut oil, if necessary. Once hot, down just a smidge.
- Pour the mixture into the mold in small amounts, I use a 1/4 cup measuring cup and filled only halfway, remember that these are silver dollars so keep them quite small. You can fit about 4 pancakes in the pan at once. When the top starts to bubble and a little drier / done, then flip and cook looks the other side. Usually under a hint to see how they do they are getting before the turn. Serve with syrup or jam or fresh fruit.
- Practice makes perfect with pancakes. Boy I know ever. One thing that helps is to know how hot the pan should be, you will find on the fly. I usually end up turning down because mine are getting golden pancakes too fast. Continue to adjust the heat until you find the sweet spot.
