Growing up, one of my favorite summer treats from the freezer aisle were cold and creamy fudgecicles ice creams. For those who are unfamiliar with fudgecicles, they are an ultra popscicle chocolate ice cream that is not enough. It's more ... fudgey. When I switched to eating (and mostly free processing) of plant origin such outbursts of milk and high fructose corn syrup filled were not as attractive (see the rest of the ingredients here ).

finally discovered the delicious bars Fudge so delicious, and for a while it was quite stuck in those. The ingredients are not so bad, but they are quite expensive for only four mini chocolate bars, and have yet refined sugar. Certainly better than the original Fudgecicle, but I knew I had to reach a healthy home-made version.

I've done a lot of experimenting with recipes fudgecicle over the years, but the recipe I'm sharing today is by far the easiest and simplest. Only three ingredients and no refined sugar, dairy, or soy. My daughter loves these sweet bursts of sugar! We made our mini in popsicle molds, popsicles to be easier for small hands to hold, and the controlled part.

As temperatures get into the mid-90s here this week, it is better than going to have ice water on hand at all times, including these creamy fudge pops.

Vegan Fudge Pops

  • 1 can coconut milk filled fat *
  • Cream 1 can coconut milk (Refrigerate overnight and pick up the cream, save the liquid for smoothies)
  • 2-3 tablespoons of cocoa or cocoa powder
  • 2-3 tablespoons maple syrup
  • optional - pinch of sea salt, 1 teaspoon vanilla

Directions:

Pour entire contents of 1 can of coconut milk, cream the top of the second can , cocoa powder, maple syrup, and optional salt and vanilla in blender. Blend on high until smooth and well blended. Pour into popsicle molds and freeze until solid.

Notes:

* You can also use about 2 1/2 cups coconut milk homemade, but the results can be more frost. More fat = creamy sweet pop.

use all 3 tablespoons each of cocoa powder and maple syrup. Start with 2 tablespoons and flavor. Dutch processed cocoa is also good in these outbursts of fudge.
