Sweet Potato Toast! + 7 Fun Plant-Based Topping Ideas
Over the weekend I found an idea, actually appeared in my Facebook feed as a announcement yahoo.com . One idea that could kick myself for not thinking. roasted sweet potato. As in, sweet potato slices, roasted in the toaster (or toaster oven) and is used instead of bread. I was excited and a little skeptical, so I had to try it for myself that day. I posted the Instagram photo below.
So far it has been one of my most liked photos! The sweet potato toast trend seems to be sweeping the Internet, so I wanted to let you that, if you were like me, had not heard of this idea until about 5 hours ago hmmm ....
You can slice them anyway you like, but I chose lengthwise to allow for more ingredients. They are also reminiscent of toast in this way.
I used a toaster oven, but many people are using a regular toaster to make these. He had a little regret about sending our little toaster to Goodwill few years ago "to save space" as we have a toaster oven. Who knew that I would like that old thing back! You will still need to provide for them on high for about 2-3 cycles. It took about 2 1/2 mine for gold cycles like this. The results will vary based on differences of toasters and toaster ovens and how thick your sweet potatoes look, just keep an eye on them.
Hedges
This is where you can get really creative! Any of your favorite ingredients toast is delicious! Here are seven mouth watering toppings to inspire you.
- cream Cashew * + + mango slices sprinkle of red pepper flakes
- vegan provolone slice + sliced strawberries + chopped basil
- cream Cashew * + fresh blueberries
- tomato slices sliced avocado + + red pepper flakes
- sliced strawberries + tahini maple dip
- butter peanut + + bananas chopped nuts
- dill salad of chickpeas * + sliced radishes

cashew Cream
- 1 cup raw cashews soaked (soak for 2 hours, drain + rinse)
- 1/4 cup filtered water
- 2 tablespoons lemon juice
- pinch of salt
- maple syrup 1 tablespoon
Blend all in a high speed mixer on high, if a Vitamix is used may have to use the ram to push everything down, or stopping to scrape the sides a few times. The cream thickens in the refrigerator.
dill Chickpea Salad
- [19459013A] 1 - 15 oz chickpeas, drained and rinsed and mashed with a fork
- 3 tablespoons homemade vegan mayonnaise without oil (or use bought vegan store May)
- 2 teaspoon fresh dill (or more to taste)
- 1 finely chopped pickle spear dill
- 1/2 cup chopped celery
- pinch of garlic powder
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice or apple cider vinegar
- salt and pepper to taste
Combine all ingredients and mix well in a large bowl. Store in the refrigerator. Flavors develop even more after cooling in the fridge for an hour or so.
This is such a fun idea and every truly healthy alternative to regular gluten free bread or food. Sure, you could turn on the oven and roast these in place, but where's the fun in that ?? Plus, it's a great idea to the dead of summer, when the last thing you want to do is turn on the oven.
