Second, this: cornmeal + lemon + = blueberries boggling mouth delights. Third (if more) you get to throw all the ingredients in a blender, good whip, it is poured into a mold for hot waffles, and eat.

It's that easy.

Fourth, fifth, seventh, six ... reasons I love these waffles (sorry can not stop) is that they are gluten-free, vegan (of course), made with whole grains and simple ingredients and sweetened with only one handful pure maple syrup. If you want to go all whole foods as possible (and often do) you can omit the syrup and sweeten their biscuits with dates.

The compote syrupy blueberries is equally effortless, and is made with frozen blueberries, so do not worry about shelling out the cash for berries fresh in January. I have friends all covered.

So go ahead and warm your hands on the glow of a hot waffle iron while cooking up this delicious breakfast. Snow accumulations of up to five inches? That's fine, I'll wrap my snuggy and enjoy my waffles drenched in lemon flavored cranberry sauce, thankyouverymuch.

Inspired by this prescription and a recipe for this book

makes about 3 large Belgian waffles style

ingredients:

  • 1 cup water or almond milk
  • 2 tablespoons virgin coconut oil unrefined, melted
  • 2 tablespoons maple syrup or boneless 2-3 medjool dates soft
  • 1 teaspoon vanilla extract
  • 3 tablespoons of juice lemon
  • zest of 1 lemon
  • 1 cup oatmeal
  • 3/4 cup corn flour organic low *
  • 1 tablespoon ground flax seeds gold
  • 1/2 teaspoon sea salt or Himalayan pink salt
  • wait and add after mixing = 2 teaspoons baking powder
  1. Connect your waffle iron and get the baby start.
  2. Add all ingredients except the baking powder to your high speed mixer and blend on high until very smooth. Add the yeast and mix at low temperature until incorporated. Let stand for a few minutes.
  3. Spray waffle iron with avocado oil (I like this one has no chemical propellants) or use coconut oil to lubricate.
  4. Pour mixture evenly over hot waffle machine and close the lid. Let cook until steam slows, then open carefully to check for freshness. Continue cooking if you want a crunchy cookie, checking every minute or so. Remove from pan and set waffles on a plate, continue with the remaining dough.

* Try to find non-gmo flour organic corn, if possible. There are several companies that carry it, including King Arthur, tropical traditions, and Hodgson Mills. If google gmo organic corn flour not you should get some results from Amazon and other online stores. If not found, you could Sub in millet flour to cornmeal, or a combination of millet, buckwheat and sorghum (a personal favorite).

  • 1 1/2 cup frozen blueberries
  • 1 teaspoon maple syrup or other sweetener of choice
  • arrowroot powder 1/2 teaspoon of mixture in 3 tablespoons of water

simple. Only heat over medium heat until it gets a little bubbly, then reduce heat to low until the syrup thickens.
