Hehehe ... 😛 a little food humor for Monday! I apologize ... but I really love a good joke second grade. If you thought that my joke was cheesy, just wait until you see what I have lined up for you this week. From this oh so rich and delicious vegetarian macaroni and cheeze.
This is one of my go-to recipes for an easy meal that I know my picky daughter will eat. I have a couple of different ways to pull together a cheese sauce without milk, but this is my favorite to launch on pasta version because it is made of a lot of vegetables. Everything the taste, however, is creamy, cheeky, Cheeeeeese ! Remember Velveeta boxes mac and cheese that came with that package squeezy "cheese"? Well this sauce reminds me of that, but without the creepy imitation food ingredients, high in sodium and saturated fat.
The luxury CHEEZE sauce has only 5 main ingredients, and has vitamins, minerals, healthy fats and vegetable protein and iron. Pair it with whole grain or gluten-free pasta, and yourself a packed lunch nutrition disguised as a favorite comfort food.
As you have noticed, I used penne pasta in the photos above. Which is another reason why opening joke was so funny. Macaroni? That's not macaroni! Impasta !!

Some people might be afraid to make the transition to a plant-based diet because they worry they will not be able to enjoy the same comfort foods that grew and love. I've seen some quotes from Instagram that say so perfectly, "Anything you can eat, I eat vegan," I would change to say "whole-food / plant-based and vegan." In other words, healthy and free animal product. Honestly, this, saucy, cheezy cozy pasta dish is just the tip of iceberg CHEEZE block. There are so many ways to creatively use the vegetables, fruits, nuts, vegetable milk, seeds, beans, grains and other plant foods to literally create anything your heart desires comfort food loving you little.
you can have this mac and cheeze ready in less than 30 minutes. If you organized in the kitchen, I'd say 20 minutes exactly. Although I do a lot of cooking, still'm culinarian is so sporadic. I thought about calling my blog Klutz kitchen, but I'm pretty sure he has already taken.

velvety fires Mac and Cheeze - NO milk, oil, butter or
- 8 - 12 oz macaroni or other pasta
gluten or whole grain
- 1 small, scrubbed and sliced 1/4 inch thick sweet potato
- 2 medium carrots, peeled and thinly sliced
- 01.04 to 01.03 cup nutritional yeast
- 1/4 cup cashews (soak for a few hours, ideally)
- 01.02 TBS hemp seeds (optional, adds protein, omega-3 fatty acids fatty acids, and extra creaminess)
- 3/4 cup water
- condiments - I like a pinch of onion powder, garlic powder, paprika
- salt and pepper to taste
Instructions:
- Place a steamer basket in a medium saucepan filled with a few inches of water. Throw in their sweet potatoes and carrots and put the lid on the pot. Reduce the heat to medium-high. Steam for about 10 minutes or until vegetables are tender.
- Meanwhile, cook your macaroni according to directions. Drain in a colander, and put the pasta back into the pot.
- In a blender, combine the water, cashews, nutritional yeast, hemp seeds, and seasonings. Blend low to high and mix until completely smooth. Add the sweet potatoes and steamed carrots and mix again. Add salt and pepper to taste, mixing until smooth and creamy.
