A recent trip to the market our local farmer prompted me to create a salad of bright, summery, sweet and sour kale. There is something in big bunches of fresh vegetables in a market that encourages me to buy not one or two but usually three different varieties. I try to use kale and other vegetables in a variety of ways: smoothies, juices, stir fries, pastas, and of course, big beautiful salads. At the same time I was thinking about what to do with a fridge that was literally pouring green leafy vegetables, was also brainstorming ways to use a fruit that is relatively new to me: Raisins. These small juicy and bitter glowing orbs seemed the perfect pieces of sweet mango and avocado-kale massage supplement.
You have to hand kale, which has far exceeded his fifteen minutes of fame. All hail ... This kale, green energy house rich in nutrients not going anywhere soon. In other circumstances, I would be upset by all the fuss and hype surrounding a particular food, but honestly all love curly cabbage is fine with me. My Smokey hot-Kale salad with maple sweet potatoes and apples is a great choice if you want to try a salad of steamed kale apenas- (which is awesome for fall early!). I also like to chop the kale and add to pizza, soups, pastas or; Just wait until you add about 5 minutes before the end of the plate, so kale does not get done.
Summer is still here for a little more, so I'm using all my fruits and vegetables fresh market has to offer in this dish and mix colorful, full of nutrients. Give your health and beauty a boost with this vibrant kale salad!
Kale summer salad of avocado, mango, and raisins (oil)
- About 1 bunch kale (or other variety), or 6 cups filled
- 1/2 large avocado puree well
- 1/2 large avocado, cubes or slices
- 2 tablespoons fresh lemon juice
- 1 mango, peeled and chopped
- 1/2 cup fresh red currants or raspberries would be delicious too!
- pinch of salt
- Pepitos toast / pumpkin seeds and walnuts (optional)
- touch of balsamic or red wine vinegar
Instructions
1. Wash kale and strip the leaves from the stems. Chewing easier, sometimes then use a sharp knife and cut the kale into small pieces, or you can rip the leaves into small pieces by hand. Place the chopped cabbage in a large bowl.
2. Mix half mashed avocado with fresh lemon juice and a pinch or two of salt or to taste. Then the mixture over the chopped kale leaves and massage for about 5 minutes pour. Add more lemon juice or salt if desired.
3. Mix the remaining ingredients in the salad and add a splash of red wine or balsamic vinegar and top with nuts / seeds if desired. Serve immediately.

Edit 08/05/15 The Kale thallium scare ...
Then I realized shortly after the publication of this post that did not refer to any of the recent articles They are circulating around kale. I thought maybe I'd like to comment on the topic, briefly, and share some items to let you decide. My feelings about kale, and is the tendency to capture thallium, a toxic heavy metal, soil and therefore make you sick, are mixed. On the one hand, I think it's a good idea to review complaints and take them seriously. On the other hand, it has to approach everything with a healthy dose of skepticism. Most things in life are not so cut and dry. If I think kale is horrible and is doing all the sick world? Probably not (obviously I just published a kale salad!), But I would warn eating too much of anything, including kale. Always be sure to turn my weekly green, first, that keeps things interesting, and secondly makes sure you are getting a mixture of nutrients, and decreasing the risks of consuming too many oxalates which it is all other topics not related, and honestly not one to worry too much about. Although I have a career in health under my belt, I'm not a doctor or scientist, and I encourage all of you to take my word with as much a grain of salt as the word of anyone else on the Internet.
