Lemon Sesame Kale Salad with Strawberries (vegan, oil-free)
Time here has become tropical, with temperatures creeping up to 90 and plenty of moisture . This type of summer heat makes me want to give up heavy meals and fill my plate with fresh, juicy fruits and vegetables. Some may find this surprising, but not usually do too many salads. If I do, it's usually a quick "throw some baby spinach in the middle of my plate" with a splash of vinegar or lemon juice type of salad. Lately, however, I have been craving big green leafy salads, and this number kale lemon has been a regular lunch in recent weeks item.
Part of the reason I do not do a lot of salads is that they always think it is necessary to cut a hundred vegetables for them, and do not want to take the time. Actually, a lot of vegetables is not needed for a good salad. Sometimes keeping it simple yields the tastiest salad, where you can really appreciate each flavor. 3 reasons to keep coming back to this salad:

I'm a little late to that letter, and realize strawberry season is almost over, but you can easily replace other summer fruits for strawberries. Try using peaches, nectarines, apricots, or raspberries. If you're in the mood for chopping vegetables, try adding some fresh cucumber or jicama hyrdating. If you are adding a lot of extras, you may want to double lemon tahini dressing.

Lemon and Sesame Kale Salad with strawberries (oil, vegetarian)
serves 1-2
Ingredients:
- 1 bunch kale, washed and cut into small pieces (about 4-5 cups)
- 10 large slices of strawberries, raspberries or substitutes, peaches, apricots and other fruit of choice chopped
lemon tahini dressing:
- juice of 1 large lemon
- 1 heaping tablespoon tahini
- 1 teaspoon maple syrup
- pinch of sea salt
Nut & seed Topping: handful of sesame seeds, chopped almonds, and sunflower seeds
Directions:
- Whisk the dressing ingredients in a large bowl until smooth. Add the chopped kale and use clean hands to work the bandage on kale. Massage for a minute, this will help make kale offer. I usually leave the dressing do its magic for a few minutes while I cut the strawberries and gather my coverage. Stir in fruit and nuts and seeds and serve!
Alternative "Parmesan" Topping:
Sometimes I like to overcome this kale salad with a very easy to "Parmesan" nut. Use a mini processor or blender bullet type foods with a straight blade to grind a handful of cashews or almonds either (or a mixture of both) with a pinch of salt and half a teaspoon of nutritional yeast. Grind until course crumbs and sprinkle on your salad.
