One of my favorite desserts time is chocolate pudding. Silky smooth, rich and creamy, which is the perfect treatment and can be done with simple and nutritious ingredients. Today's recipe is the third chocolate pudding / mousse I have shared in the blog, and I'm sure it will not be the last. While my other two puddings have a good amount of fat for creaminess, either coconut cream, avocado, or cashews, this version is low in fat and sweetened only with dates. It is also free banana and can do without nuts as well. Any guess about the main ingredient of this dessert soft as silk, rich chocolate?

If you thought it was sweet potatoes, then you are the winner! Ding ding ding! If you've been following my blog for some time, you may also have noticed that the sweet potato is the secret ingredient about 9 times out of 10. What can I say, I love that orange tasty tuber! It works surprisingly well in this pudding. When it combined with dates, cocoa powder and milk without milk of choice, which merges with, chocolate pudding silky smooth, rich texture.

I love a treat that is also rich in nutrients. I hate to say "not guilty" because I do not think any dessert should make you feel guilty, it's all about moderation and balance. This pudding is a good source of antioxidants, vitamin A, fiber and potassium. A sweet dessert comforting, with a lot of beautification ingredients, good for your skin? Yes please!

Low Fat Vegan Chocolate Pudding (made from sweet potato)

2 servings

  • 1 potato medium sweet, steamed or baked until it is very smooth and cooled * (about 3/4 cup puree)
  • 1 cup milk dairy products free choice (I like homemade coconut or almond, but any will work)
  • 6 medjool dates soft (soaked in hot water for 5 minutes)
  • 1/4 cup cocoa powder (or more to taste)
  • optional: 1/2 teaspoon vanilla extract + pinch of sea salt

Instructions:

  1. Mix all ingredients in a blender (high-speed blender the silkier results will be obtained) to very smooth and silky. Dish in small bowls and refrigerate for one hour. Store in the refrigerator. Best if consumed within 2 days.

Notes:

* I like to roast a sweet potato extra night before doing this. I just scrub sweet potatoes, poke a few times with a fork, and roast until skin is very smooth. About 45 minutes. If you have a very large sweet potato, simply measure about 3/4 cup, pureed.

This is subtly sweet, if you like sweeter add one or two teaspoons of maple syrup.
