The Joy Of Eating Vegetables
As a vegetarian, I often wondered what as I made the decision not to eat any food of animal origin. With a little grin, and great concern, the question arises: "So ... everything you eat are vegetables"The tender joy that comes with eating vegetables goes far beyond the perimeter of our dishes. Vegetables are the key to life and robust health. They beckon and intrigue us, so that no animal feed could never, with its seductive beauty.
The life of vegetables overwhelms our senses. The delicate beauty of butter lettuce - leaves open like a rose in summer - meat saffron of winter squash, exquisitely intricate tendrils of pea plants, shapes, sizes and various shades of lush red, ripe tomatoes , they are only the first layer of the appeal of vegetables.
The perfume of freshly cut vegetables, their persistent earthy aromas, along with the feel of them in our hands, seduce us.
And we have not even started cooking yet . Imagine a meal made of orange pumpkin, coated in breadcrumbs with hints of garlic and parsley and grilled to sweet perfection along with leeks and mushrooms cake encased in a crisp crust. On the side, crispy fried baby bok choy with fresh ginger, and a risotto sprinkled with asparagus and tomatoes. Mmm, right?
The coolest part is that none of cooking vegetables is difficult or time-consuming. They are affordable, accessible and simple. If you have fresh ingredients, then they have little need for complicated techniques, sauces and other tricks used to make less palatable wonderful ingredients. Mother Nature has provided us with everything we need to feed our body the healthiest way decadently.
And while many of us are not interested in taking chicken meat off the full menu, a plant-based diet turns out to be green in more ways than one, being better for our health and the health of the planet.
We have damaged the planet we call home, looted its resources drained and polluted seas and ravaged their land. We have spent decades, if not centuries, taking it and give nothing in return. The tide has to change if we want out of this mess alive.
One of the best ways we can give back, creates a lighter footprint and allow our beleaguered planet the opportunity to heal herself, it is to look at the choices we make. And it makes sense to start with our food. It's the only thing about which we have complete control. Decided, bite by bite, what we eat. And with that decision we created the footprint we leave behind us.
worth looking at the plate in front of you and understanding the impact it has had on the world around him. Where does your food? How far you have to travel? How much fuel does it take to get to your plate? How much water is needed to produce it? How much land was washed away? We must ask if the food sits well with our conscience, and we believe that good food we are. We must ask, apart from the satisfaction and immediate gratification, so does our food choices benefit us or the planet ... and what damage it might be doing to us ... and the planet?
Although I'm not sure that we can always revert fully what we have done, digging our gardens, getting an assignment of a CSA, organic growth and eating sustainably can help alleviate our collective guilt, and we naturally a wee mother respite from the constant bombardment that human life gives you.
And when we put in more than what we get out, the rewards are delicious. We become hopeful, and perhaps deceived. We get away, just for a minute of madness that is our modern food supply. We started to develop a connection with the food we eat. We are delicious simplicity. Our food becomes honest, straightforward and uncomplicated.
As you look down at your plate full of vibrant life of vegetables, you will see that even when we make a lighter footprint, as we try to put further back we took from our fragile planet, it continues to provide so we can prosper.
We do not have to grow our own food, buy locally or cook for us. We have access to all the food (if you can call it that) what we might want. But cooking with vegetables gives you an extraordinary feeling of fullness, and a deep respect for the ingredients. This is something that we are less likely to experience collecting canned vegetables, frozen or canned at the supermarket down the street. Cooking fresh vegetables helps us to appreciate the value of food, and develop a respect for nature.
I dare say that the joy of cooking with vegetables tender will change your life ... in many ways.
