is light, creamy, whip, and is just screaming to be submerged, dolloped and enjoyed as a complement to anything that will stand still. It is made with just 3 ingredients. I am not. No oils. I love this whip, because it is the perfect filling breakfast. Impressive in pancakes, waffles, fruit, cereal, frozen desserts, cakes, cheesecakes, raw fruit cobblers and crisps, spoon, finger ... basically any thing.
This is the preliminary mousse recipe in the morning. I'll give you a hint, which is a baked, and I actually shared product already weeks in Instagram. I had a slightly different Cashew "icing" planned for the next few goodies, but I woke up one morning with an idea of adding yogurt cashew cream. I am very happy to have done it.
While cashew cream is rich and thick, and certainly delicious, this variation yogurt + cashews is lighter, roomier, and has an almost coconut whipped cream texture. I like that is not as rich in calories as full cashew cream and yogurt adds a tangy-ness impressive. In fact, almost it has a cheese-flavored cake. While coconut mousse is amazing and has many uses, full fat coconut not always settle well with me for some reason. Also, sometimes I do not want a coconut flavor so strong in my whipped cream. Although I used coconut yogurt is not intense coconut flavor, and if you really do not like coconut, you can use another yogurt or soy milk like almond.
The only exception to this ability to whip up Cashew yogurt would be something like hot chocolate. There is more than enough light to work for it, and most likely sink. Also I am not sure that the touch of yogurt would work there. In all other cases I can think of, this would be perfect! I can think of many recipes to use this whip, like fruit salads, cakes, unbaked cheesecakes, fruit sauce, etc. Use your imagination, surely you can come up with more ideas.
Moreover, there is always a spoon. Or with your finger.
Yogurt-Maranon whipped cream
- 1 cup raw cashews, soaked for 4 hours, rinsed and drained well
- 1 cup yogurt nondairy vanilla (I used vanilla yogurt coconut so delicious)
- 2 tablespoons fresh lemon juice
Instructions:
Combine all ingredients in blender and blend at high speed from low to high until completely smooth. Scrape into a covered container and chill in the fridge, where it will realize. Before serving, use a fork to beat up. It is also possible to use an electric hand mixer to make it fluffy.
Notes:
The yogurt was sweetened used, but you could also use a sugar-free vanilla yogurt, or even a non-dairy unsweetened plain yogurt. You'll want to add sweetener to taste, such as stevia, organic powdered sugar, a few dates, or a little maple syrup. The addition of a large amount of additional liquid could produce a less whipped texture.
can halve this recipe, but for easier mixing, I would use the listed parts. Using 1/2 cup cashews and yogurt is a little more difficult to mix, but it will work.
