I love easy snacks. Especially the kind where you put everything in the food processor, grind and roll. No baking required! I think that's one reason I like raw food, especially raw desserts and snacks; which is an easy way to cook. Or noncooking. I love that you can satisfy your craving for a nutritious way. They want a brownie, for example? You'd be surprised how much land to dry, dates fruits, and cocoa can taste can taste like the real thing! A few days ago, I had muffins in the brain. Delicious, moist and sweet blueberry muffins.
These delicious little morsels satisfied my desire and gave me a burst of energy. raw blueberry muffin Energy Bites
Makes about 15 bites
Ingredients:
- groats buckwheat 1/3 cup raw, ground into flour (soaked and dehydrated use, ie activated, if possible *)
- 1/3 cup rolled oats, in the form flour (GF certified if necessary use)
- 2 tablespoons almond flour (grind their own raw almonds in a blender or food processor)
- 04.03 medjool dates (soaked hot water for a few minutes and drain well)
- 1 tablespoon chia seeds
- 1 tablespoon orange juice freshly squeezed
- 1 tablespoon almond milk
- 1 tablespoon protein powder vanilla herbal (my favorite is the protein powder vanilla raw Nutribiotics ), or sub in another tablespoon almond flour and add teaspoon vanilla extract
- 2 teaspoons of my Homemade vitamin C powder , or orange peel
- 3 tablespoons dried cranberries
Directions:
- Add all ingredients except dried cranberries, to your food processor. Process until all stick together. If it is too dry, add a little orange juice or milk additional almonds.
- Fold in the dried cranberries. Roll the "mass" into small balls, located on a parchment lined tray oven and place in the freezer for about 30 minutes. Store in the freezer (harder) or in the refrigerator (for softer bites) in an airtight container.
Notes and Variations:
