Today I'm sharing a simple last great, 3 ingredients, herbal dish. My goal with these last three posts is to give a little fun inspiration to change things in the kitchen, while still keeping it easy peasy. I'm hoping to share not so much "recipes", where you have to keep looking and check again to ensure that it is following to the letter, but that ideas can take and run with.

These spicy heart of palm rounds, but it will take 10 minutes to throw together, and a mixture of spices bought in the store make time for preparing a cinch. In fact, I made these rounds, I prepared a delicious wrap, I took several pictures of everything, and most of it was eaten, all in about 30 minutes. I used my singed and experienced rounds to make a very tasty wrap (above), with romaine lettuce, cooked frozen sweet corn, radish, avocado and cilantro. I moved to a simple creamy lemon dill dressing with tahini, water, lemon juice, dill and salt. It was a winner! Here are some other simple ways to turn this dish into a meal:

  • Serve with garlic Rainbow Chard over quinoa with a baked sweet potato
  • Principle of creamy pasta - I think these would be delicious with simple Zoodles (noodles zucchini) and creamy sauce combined avocado, or gluten-free pasta with creamy sauce of cashew
  • Serve with rice and sauteed vegetables steamed or

switch up spices depending on the dish, try seasoning mix of Italian, Thai seasoning, Cajun or Creole seasoning, jerk seasoning or Jamiacan. Or make your own. Whichever way you choose to serve these kicky bites, I hope it gives them a chance.

spicy braised Palmito Rounds

  • 1 can hearts of palm, drained and cut into 1/2 inch rounds
  • a couple of tablespoons of mixture of seasonings of choice (I used a cajun mix)
  • 1 teaspoon coconut oil or olive

Instructions:

  1. Add to seasoning mix a small bowl. Dip rounds in spices, so flipping both sides are coated. Place on a tray or plate.
  2. Spray a skillet with oil, only a thin layer work. Heat the pan over medium heat.
  3. carefully organize the rounds in the hot pan. Cook 1-2 minutes on each side until golden brown. Transfer to a serving dish or use as desired.
