Make this Chinese favorite at home! The secret? Use potato starch for this squid rings recipe instead of all-purpose flour for extra crunch.
Serves 2 to 3
Prep Time 10 minutes
Cooking Time 10 minutes
vegetable or canola oil for deep-frying
2 eggs, beaten
1 cup potato starch
salt and pepper, to taste
200 grams squid rings, cleaned
lemon wedges, to serve
1 Heat oil in a deep-fryer or deep frying pan over medium heat.
2 Place eggs in a bowl. Combine potato starch, salt, and pepper in another bowl.
3 Dip squid rings in egg, then coat in seasoned potato starch.
4 Deep-fry squid until cooked and golden brown. Drain on paper towels and sprinkle with salt and pepper. Serve immediately with lemon wedges.
