Vegan Coconut Milk French Toast with Fried Plaintains
This post comes to you on a whim such. I really was not thinking about posting this today. It was just an idea that has been floating around my head in the last couple of days I finally decided to do only once! To my surprise and delight it went smoothly!
This French bread is inspired by a dessert I've ever tried, in a Caribbean restaurant in our city I've ever been. Why we have not been there, however, I have no idea. I'd say about once a year I remember he and I and oogle the menu again. The menu has a small but delicious vegetarian section, and I want to try every dish. Ingredients:
- 1/4 cup shredded coconut without sugar
- 3 to 4 tablespoons arrowroot powder (see below substitutions)

- small pinch of sea salt

Instructions:
- Make easy coconut milk. Boil some water in a boiler. Add the grated coconut to your blender. Add 1/2 cup hot water boiler. Let stand for a few minutes, while the other ingredients together. Then add another 1/2 cup water, cold or room temperature to the blender. Mix on high for one minute. Strain milk through a fine mesh strainer. Rinse the blender and add milk again.
- For milk in blender add 3 to 4 tablespoons arrowroot powder (I did 4 tablespoons), 1 soft Medjool dates, spices. Mix until smooth. Pour into a shallow dish and let stand while the bread is toasted and preheat the pan.
- Add a teaspoon of coconut oil to your preheated pan. Give the coconut milk mixture a quick whisk and then dip both sides of toast in short, is not simply taking covering. Cook in pan, lightly fry one side and flip to brown the other side.

Notes:
'm sure you could use a coconut milk "lite" canned or even a drink of coconut milk as delicious as instead of homemade, but the homemade is so easy and cheap, and has a coconutty flavor. I probably heat the milk bought in the store a bit if you go that route so arrowroot dissolved in which it is easier.
In the past I have also used about a tablespoon of chia seeds on the ground, or even tapioca starch to thicken the milk and flax seeds work well.

If you use a bread like sourdough bread or other sturdy, you probably do not have to provide at first. Really, really I do not like soggy bread, so that's why I offer the first mine!
