Ingredients:

  • 4 small apples, hollowed carefully (see next recipe photos)
  • 1/2 cup cashews, soaked 2-4 hours
  • 1/3 cup filtered water
  • 1 - 2 tablespoons fresh lemon juice
  • Medjool dates in March faced, soaked 10 minutes in hot water if soft
  • 1 teaspoon vanilla extract
  • 1/8 tsp salt
  • flour 1 tablespoon coconut - soft game, or coconut flour 2 tablespoons cheese for a firmer set, leave it out of a filling fluid cream that will cHEEZE
  • optional: chopped nuts, walnuts, almonds, raisins, coconut sugar, cinnamon, nutmeg, cloves

Instructions:

  1. Preheat oven to 375 degrees F. Place the hollowed-out blocks (see below for photos) on a parchment lined baking sheet.
  2. Add cashews, water, lemon juice, dates, vanilla and salt to a high speed mixer and mix until smooth. A blender would work also, be sure to soak the cashews and blend from low to high. You may need to add another tablespoon or two of water, as needed, or stop and use a spatula to scrape the sides. Taste and add more lemon juice if desired.
  3. Add the desired amount of coconut flour to the blender and mix again at low to mix flour background.
  4. Before the addition of cheese to apples, add any optional ingredients, some raisins, sprinkle coconut sugar, nutmeg, cinnamon or, or one or two teaspoons chopped walnuts to the hollowed apples. Then add the cheese cake, filling the gap evenly with the top of the block.
  5. Bake for 45 minutes or up to an hour, until apples are tender and juicy. Top with chopped nuts and my healthy Candy (I thinned out with a little apple juice or you can use almond milk or water to dilute out in a sauce.)
