Crispy Coconut-Lime Kale Chips with Thai Spices
If you are looking for a healthy snack to replace the chips and chips, then kale chips could become your new best friend. They are light and crisp, and relatively inexpensive and easy to do. I've done a lot of kale chips with a little oil and salt, and that's all. Now, that's all well and good, but if you really want to take your taste buds for a joyride, then take a lemon and a little coconut and mix until alllll!
Earlier this summer my aunt gave me a beautiful box of coconut lime kale chips had picked up from your local farmers market. As soon as I tried, I'd fallen in love. They had amazing combination of acid and salt which are found in the salt and vinegar potato chips. The type of flavor that literally makes you salivate and cause the involuntary twinge jaw. Just had to recreate at home. I think the tangy, coconutty, crunchy, chewy sensation caused by these totally addictive chips. I think you will too.
Kale chips, Easy as 1-2-3 (4)
- wash and dry your Kale. Dry very, very well.
- mixture into the oil and spices. Get in there with your hands.
- Bake until nice and crispy. Proceed to eat them all within 5 minutes.

crispy coconut and lime Kale chips with Thai Spices
Ingredients:
- 7/6 cups kale, washed and dried fine (approx. 1 bunch)
- 1 tablespoon coconut oil unrefined lemon zest
- 1 teaspoon divided by half
- 2 teaspoons lemon juice *
- 2 tablespoons grated unsweetened coconut
- 1 tablespoon nutritional yeast, optional but highly recommended
- 1/4 teaspoon salt
- 1/2 teaspoon Thai seasoning (I use islands of Thai spices seasoning ) **
Directions:
- Preheat oven to 300 degrees F and line a baking sheet with parchment paper or lightly grease with coconut oil. Dry your kale well. Tear pieces of first order of size of the stems and place in a large bowl.
- pour oil and lemon juice and massage kale, with the aim of covering each piece. Sprinkle with half the lemon zest, coconut, nutritional yeast, salt and Thai seasoning and use your hands to mix everything in.
- kale layer on the baking sheet and bake in the preheated oven for about 10-12 minutes, turn baking sheet at 180 degrees and bake another 5-7 minutes, checking to make sure chips are not burning.
- chips Take out of the oven and let cool for a few minutes, they will crisp up a bit more.
* You can wait and sprinkle lemon juice on chips after cooking, for extra crispy chips. Lemon juice will cool on the outside with a chewy center. Both ways are good.
** The main ingredients of Thai seasoning are the lemon peel and chiles. You can sub in a sprinkling of dried lemon peel and chili powder (or cayenne for more spices / kick). Or substitute your favorite spice or condiment.
