This is vegetarian and gluten-free cookies perfect healthy recipe to have on hand for when you have to have chocolate chip cookies, but is running on ingredients. No dates, bananas, nut butter, or almond milk? No problem.
One night last week, on the eve of groceries, my daughter and I found ourselves in the situation fairly. The two had cookies in the brain, but we were out of our usual ingredients go-to treatment. We had just eaten a box of our favorites dates , so the date of my favorite pasta sweetened chocolate chip cookies peanut butter were out of the question. Not to mention they were out of peanut butter. Additionally, in our last banana she had just turned in our breakfast smoothie, so no delicious banana oatmeal cookies were happening, either.
The thing is, shopping becomes quite the case when you have a high energy, strong-willed child, very opinionated, as our little one. She is a lot of fun, and can be the sweetest boyfriends, but put it in a shopping cart and is like watching Bruce Banner in Hulk back. So I try to put off grocery shopping until it is an absolute necessity. My husband is very good for picking up odds and ends to extend the days between the "big trip" but if you want the right kind of spinach or ingredients at random by some idea recipe dancing in my head, then it will be better than had pack my little green monster ready.
I get a strange satisfaction to see how long you can go without buying more food. Honestly, I think it has fewer ingredients often stimulates my creativity, and sometimes leads to some tasty meals and recipes. It also forces us to use up what we have, which means that very, very rarely throw anything away, because it is expired or mold. Even when it seems that "there is nothing eeeeat :" You can always come up with something. I would have a stash of frozen vegetables on hand, and our pantry never seems to run out of dry beans, grains, vegetable broth boxed and canned goods home from my parents.
So, back to our situation cookies. Just when it seemed unlikely, fresh chocolate chip cookies melted home, I remembered a recipe I created almost a year ago.
I called these cookies cookies pantry, because all of them came from my pantry.
- oatmeal
- unsweetened shredded coconut
- date sugar (or coconut sugar)
- maple syrup
- unsweetened apple (homemade ;! Thanks dad)
- coconut oil
- without milk chocolate chips
If you keep these ingredients on hand, never there will be no delicious (and healthy) homemade vegetarian and gluten free chocolate cookies anymore. Not to mention, there's like a million and a half things you can do with these ingredients, but actually only have them for the cookies worth. They are ridiculously good and bind oh so quickly. You have 15 minutes and a few non-perishable ingredients on hand? Then, my friend, have cookies.
These are soft and chewy in the middle and perfectly sweet without making you feel as if the hand was sugar. In fact, they are refined sugar. I love the texture and flavor unsweetened grated coconut adds to these cookies. I can not explain why, but while they are baked in the oven, the whole house smelled like hot cakes. I have not included raisins (they were out of those too!) but I have added in the past, and is delicious.
This recipe is for you, my friends, is true, I consider all my friends, and I never want my friends to be without cookies fresh homemade chocolate you. Because sometimes you just have to eat a cookie.
coconut oatmeal chocolate chip cookies pantry
makes a dozen small cookies
Ingredients
dry
1/2 cup oatmeal + 1/2 cup shredded unsweetened coconut soil in your food processor until a golf flour is formed (not repair too long)
1/4 cup shredded unsweetened coconut
2 tablespoons of oatmeal
2 tablespoons sugar date (or coconut sugar or other granulated sweetener)
1/2 teaspoon baking soda
1/8 sea salt or Himalayan pink salt teaspoon well
wet
1 / 4 cup + 1 tablespoon unsweetened applesauce
1 tablespoon coconut oil, melted
1/2 teaspoon vanilla extract
1/4 cup chocolate chips (or more)
1. Preheat oven to 350 degrees Fahrenheit. Prepare a baking sheet by lining it with parchment paper.
2. Mix the dry ingredients in a large bowl. In a separate bowl, mix the wet ingredients (except chocolate chips). Stir wet dry, then fold in the chocolate chips. Take the dough with a spoon and how cookie shapes.
3. Bake in preheated oven for 9-11 minutes, or until golden brown funds. Remove pan from oven and let cool for about 10 minutes. Cookies will be fragile when warm, but also hold together once they have cooled a few minutes.
