Minted Strawberry and Avocado Beauty Salad with Balsamic Glaze
Ingredients:
- 2-3 cups of town and fresh strawberries cut in half
- 1 large avocado, cut into pieces or slices
- 2 tablespoons finely chopped fresh mint
- 1/2 lime
balsamic glaze
- 1 cup balsamic vinegar
Instructions:
Make your enamel. Simply bring the vinegar to a simmer, then reduce heat to simmer. Keep an eye on it so it does not burn. Simmer for about 20 minutes, or until vinegar is reduced to 2/3. You will end up with about 1/3 cup of glaze. Allow to cool and then keep refrigerated. That thickens when cooled.
Mount half the strawberries and avocado in a small bowl and the other half in another. Sprinkle with finely chopped fresh mint and squeeze lemon juice over the fruit, then sprinkle with a desired amount of enamel.
