Well, winter is not over for those of us in the region of the Great Lagos. Today we woke up to 10 inches of snow that fell throughout the day yesterday and all night. Everything has a nice look, but ... it would have looked much nicer a month ago. You see, I made the same mistake I make every year at this time. Almost every February we get some nice days Fluke-ish (last Friday was 60 and sunny) and instead recognize these as the phenomena of nature are, I instead start spinning around the yard with arms outreached singing "the hills are alive," truly believe that this year comes early spring.
Ah, well, at least I had this warm and comforting, cut oats ready to go this morning to soften the blow steel. I know oats overnight are the thing these days, and I love how easy it is, but how about a hot bowl of oatmeal "overnight"? Use the slow cooker, and you will have exactly that. And it's so easy! Just throw the ingredients in the slow cooker the night before, plug it in, turn it down, and you wake to the welcoming smell of cooked oatmeal.
Of course we had at the beginning of the mine with a generous dash of my Best homemade peanut butter, Ever as well as fresh blackberries and banana slices.

I did this in my small kitchen 1.5 slow qt, but you can double the amount and cook in a model more big.
- cup of steel cut oatmeal 1
- 2 cups almond milk
- 2 cups filtered water
- pinch of salt
- optional: 2 tablespoons chia seeds
Instructions: Grease the inside of the pot with a little coconut oil (to prevent sticking). Add all ingredients to the slow cooker, plug it in, turn down, and give it a stir. Simmer over low heat for 6-8 hours. Always add chia seeds, but that's because I know I'll be at some point and I will have the opportunity to remove it. If you do not have a two year old who wakes up without fail at least once a night (or a cat or dog) may not want to add to the morning as they are grouped up if you do not agitate one once during cooking.
Serve with your favorite ingredients: peanut butter, almond butter, fruit, caramelized bananas, maple syrup, raisins, coconut oil ...
